Sun-Dried Coffee

Sun-dried, or natural, coffee is a processing method that preserves more of the fruit’s natural sweetness and complexity. This approach is often favored by coffee enthusiasts who appreciate a richer, more full-bodied cup.

The Sun-Drying Process

  1. Harvesting: The process begins with the careful hand-picking of ripe coffee cherries. Ripe cherries are essential for developing the desired flavor profile.
  2. Drying: The harvested cherries are spread out in thin layers on raised drying beds or patios. The sun’s heat and the natural airflow help to evaporate the moisture from the cherries.
  3. Turning: To ensure even drying and prevent mold growth, the cherries are regularly turned throughout the day. This ensures that all sides of the cherries are exposed to the sun.
  4. De-hulling: Once the cherries have dried to the desired moisture content, they are hulled to remove the outer layers, including the parchment and mucilage.
